Today we will be making a quick and easy amazing seafood dish. The Poke Bowl as we know it today started forming up in the 1970s from Hawaii, over the years it’s had heavy influence from Japanese cuisine and then western. What's a modern poke bowl without some avocado slices and an Instagram post before you get stuck in. I’ve made various poke bowls with lots of different fish and trust me when I say some work better than others.
I prefer to use a fish like Tuna or close relatives such as the Bonito. I’ve had fairly good success with Trevally and Kingfish. If you can get those delicious chunky cubes you are already half way there. My Poke Bowl recipe has been formed over the years after trial and error and enjoying other people’s Poke Bowls. This has been something I’ve missed greatly since I cut out commercially caught fish. But making it at home is pleasurable and delicious. Plus, I don't have to skimp on the ingredients because I'm feeding me or my friends.

Wet Mammal's Poke Bowl Ingredients
1 x Bonito - You can use Tuna or similar fish
Sesame Oil
Rice Wine Vinegar
Soy Sauce
Alg Seaweed Rainbow Seasoning
Alg Seaweed Rainbow Seaweed Flakes
Chilli Flakes
1 x Carrot
1 x Cucumber
1 x Avocado
Bunch of Watercress
200g Edamame Beans
1 x Quick Rice (Quick and Easy)
Items Needed
A Sharp Knife - Deba is the one!
A Bowl for Mixing
A Bowl for the meal
A Spoon for mixing
Chopsticks for eating If you use a fork... no judgement here.
Kitchen Roll aka Paper Towel
Method:
Fillet, debone and de-skin then cube your fish. If you are using Bonito please please please keep the skin to pan fry up.
Create marinade
For the marinade place the cubed bonito into a large bowl, then add soy sauce, sesame oil and rice wine vinegar into a bowl. As the amount of sauce required will depend on the size of your fish id try and operate on 4 parts soy, 2 part rice wine vinegar and 1 part sesame oil. Top up with each until you have your desired flavour. Then add chilli flakes and sesame seeds to season. Im using Alg Seaweed Sesame Seasoning which works perfectly. Mix it all around to ensure everything is covered. Then leave this to marinade for at least 15 minutes. Don't be afraid to taste this after 5 minutes and determine if you need additional splashes to bring a good balance of flavour to the marinade.
Prep:
Slice up your cucumber and avocado. Grate some carrot and then finely chop some watercress. Microwave your lazy rice (quick and easy) and then let it cool to room temperature. Put your edamame beans into a pot of water and bring it up to the boil. Wait until the beans are floating and bopping around on the surface this should take 3-5mins. Remove from heat and strain the beans reducing their temperature to room temperature before serving.
Now it's time to assemble all the ingredients we have made. Place your rice into the bowl this will act as a base for your poke bowl. Next up decorate your cucumber, avocado, grated carrot and edamame beans around the bowl with a hole in the middle. Place your marinaded bonito (fish) on top in the middle of the bowl, this is for presentation and makes it aesthetically pleasing. Garnish with some chopped chilli and your watercress.
